  • 2 tbsp Kosher Salt
  • 2 tbsp Favorite Steak Rub
  • 2 tbsp Favorite Seafood Rub
  • 1 Gallon Honey
  • ½ cup Red Chili Flakes

Curing the Steak: A Sweet Start

Derek kicks things off by generously seasoning the steaks with kosher salt. The real magic happens when he lightly heats the honey until it’s super viscous, then submerges the steaks in the honey and lets them cure in the fridge for an entire day. This step infuses all that sweet goodness, and if the honey doesn’t fully cover the steaks, you can just flip ‘em a couple of times.

Perfectly Cooking the Steak and Shrimp

About an hour before cooking, you’ll want to heat that honey again and add the shrimp for some extra flavor magic. Once both the shrimp and steak are ready to go, wipe off any excess honey before seasoning with your favorite rubs. This combo adds the perfect amount of flavor to complement the sweetness from the honey.

Next, preheat your smoker to 250°F and let the steaks cook until they reach 120°F internal temperature—this should take around 30 minutes. After resting for 10 minutes, it’s time to get that crust! Fire up the grill to 400°F and give the steak a quick one-minute sear on each side.

Finally, cook those shrimp in a cast iron skillet for 1-2 minutes, and you’re ready to plate! Serve everything with a bit of butter and slice up that beautifully cooked steak. Simple, right?
