  • 4 lbs skinless & boneless chicken thighs
  • 1 lb bacon, sliced
  • 1 cup Cowboy Butter Rub (Derek’s special blend)
  • For the garlic Parmesan butter:
  • 1.5 cups unsalted butter, melted
  • 2 tbsp minced garlic
  • 2 tbsp grated Parmesan
  • 1.5 tbsp chopped parsley
  • 1 tbsp red chili flakes
  • 1 tbsp hot sauce

Step-by-Step Guide

It all starts with pounding those chicken thighs until they’re just about ⅛” thick—this ensures they’re perfect for wrapping with crispy bacon. Derek creates a base layer of chicken that’s roughly 2.5 feet long, layering on the bacon for added flavor before topping it off with more chicken. He wraps it in foil and lets it chill in the freezer for at least an hour (or longer, if you can wait!).

Once it’s time to cook, Derek preheats the fire to a medium heat of about 325ºF. After slicing the meat into 2×2” cubes, he threads them onto skewers and seasons them generously with the Cowboy Butter Rub.
